One of the great things about summertime is all of the fresh produce that’s available. Heading to the famer’s market and stocking up on local fruits and veggies can be a really fun part of healthy living. If you pick up some watermelon, tomatoes, avocados and lettuce, you’ll have the majority of ingredients to make this delicious salad recipe!
Balance Project guide and fitness expert, Gabby Reece, created this mouthwatering salad and loves to enjoy it for lunch, dinner or as a side dish. It’s a quick and easy recipe because it allows you to use some of those fresh fruits and veggies you may already have in your fridge and even better, it only takes 10-20 minutes to make. Fresh flavors and light ingredients make this beautiful, bright salad ideal for any warm summer occasion.
Here’s what you’ll need:
Watermelon
Tomatoes
Avocados
Bib lettuce
Feta cheese
Balsamic Vinegar
Olive Oil
Lemon
Salt and pepper
Here’s how to make it:
Cut up your watermelon, tomatoes and avocado into bite-sized chunks. Place the chunks onto a plate. Next, chop up your bib lettuce and lay it on top of the fruit. Crumble the feta cheese over the top. Mix olive oil and balsamic and drizzle over all. Then lightly squeeze a lemon over the top as well. Finish by adding salt and pepper to taste.
